You can override the default payment method on a per-client basis. If a particular client always pays via bank transfer while your default is PayPal, set their preferred method on their client profile and it will be used automatically for all their bills.
Client notes are also a useful place to record anything relevant to chasing — for example, "always needs a purchase order number" or "primary contact is Sarah, not the accounts email". These notes are visible to you only and are never included in chase messages.
